Former Nobu head chef Scott Hallsworth has announced the autumn launch of Japanese restaurant Wabi London. Australian-born Scott spent six years at Nobu in London before launching Nobu Melbourne in 2007.
The restaurant will serve a seasonal menu of Japanese cuisine with a contemporary European twist. The menu will feature dishes such as foie gras martini with umeshu jelly, nashi and black vinegar; onsen egg with dashi-soy, truffle salt and chives and tea smoked duck tataki with burnt ginger amazu sauce.
The restaurant will also feature a sushi bar and a pastry bar offering contemporary European desserts with strong Japanese influences.
Wabi London will be located in Lincoln’s Inn Fields, near Holborn and Aldwych.
